HISTORY :
This herb is most often used in powder form. It is also called Corète and comes mainly from Tunisia.
It can be found in many oriental cuisines such as West African, Maghreb, Middle Eastern, but also in Tunisian, Egyptian, Syrian, Lebanese or even Ivorian cuisine... It is also used to season some Asian dishes from Japan.
PROPERTIES :
Containing proteins, lipids, and mineral salts as well as vitamins (B1, B2, B3, B6), molokheya has diuretic and tonic virtues but also a capacity to thicken, and to soften.
