HISTORY :
The first traces of the plant are located in the Mediterranean basin, in the Near East and in Asia Minor. The spice flavoured the bread of the Egyptians, Greeks and Romans. But its consumption is ancestral, 6 000 years before our era.
The spice has been present in Europe since the Middle Ages, and it was the Spanish who imported it to America.
Nowadays, it is consumed on all continents and accounts for 25 to 40% of the composition of curry, thus ensuring its widespread cultivation throughout the world. It is present where it is not expected: in certain medicines to hide their bitterness.
PROPERTIES :
It is rich in vitamin K. It is said to have antibacterial properties.
COOKING :
Everything is consumed in coriander, leaves, seeds and roots. If the spice is sovereign in oriental cuisine, the West has long shunned it.
So why buy coriander, but above all how to cook it? This "Arabian parsley" will work wonders on grilled red and white meats, or shrimps. If you make your own vegetable preserves, remember to add coriander seeds.
