- Fry a large finely chopped onion and some ginger in 5 spoonfuls of olive oil (you can also choose to use ground ginger, available on our website).
- Once it has turned golden brown, add 700 g of chicken cut into small pieces and 50 mL of water, simmer for about 3 minutes.
- Sprinkle with the madras curry mixture, add the tomato purée, season with salt and pepper and cook for 20 minutes on a medium heat.
- When serving you can also chop fresh coriander over the mixture.
