HISTORY :
Garam masala spice blend is a mixture of roasted and ground spices.
All the spices that make up this blend come from Northern India.
Originally, the masala mixture was prepared by crushing the spices on stones. This preparation is the queen of Indo-Pakistani cuisine as it is present in a large number of Indian recipes. Reunionese cuisine also adopts the flavours of garam masala, better known there as "massalé".
In Hindi, the term "garam" means "hot" and "masala" means "mixture", which perfectly reflects this alliance of spices! Today, some dishes even include the word masala in their names, such as chicken masala, mutton masala or prawn masala.
COOKING :
This union of spices goes well with all kinds of meat and poultry, fish and seafood. Vegetables and rice can also be soaked up with sunshine; simply add a touch of masala mixture at the end of cooking (unlike curry, which is often added during cooking) and that's it!

Peel a cucumber, cut it in half lengthwise, remove the seeds and slice it very finely. Put it in a bowl with plain yoghurt, cumin seeds (also on sale here), garam masala and the juice of 1⁄2 lemon; season with salt and pepper and mix. Set aside in the fridge and serve very chilled. Serve as an aperitif with muffins (which you can make and flavour yourself with our spices !!!!)
