HISTORY :
Present everywhere in Maghreb cuisine, our couscous spice combination is a derivative of Ras El Hanout. These spices are used in the preparation of couscous, game in Morocco and also in many tagine recipes.
By buying our couscous spices, you can flavour your rice, vegetable, shellfish, white meat and fish dishes as in Morocco or Tunisia. Mild and not pungent, this blend is perfect for salads and oriental dishes. Buying our spices is the secret of a perfect and unique couscous!
COOKING :
In order to discover the flavour of spices in a recipe other than the traditional couscous, we suggest a recipe of beef tagine with vegetables:
- Cut 1kg of beef cheek into large cubes.
- Peel and cut the 3 courgettes and 3 carrots into large pieces.
- In a casserole dish, brown the meat in olive oil.
- Add the carrots and courgettes with the spices and garlic. Allow to brown on a high heat.
- Add salt and pepper. Add water to cover everything.
- Simmer on low heat without stirring for 1 hour (the juice should be well reduced).
- During this time, cut the kG of tomatoes and the 3 large onions into slices.
- Once cooked, put the meat and vegetables in a tagine dish.
- Sprinkle with brown sugar and couscous spice mix and cover with the onions and tomatoes.
- Bake in the oven for another hour at gas mark 6.
Serve the tagine with semolina!
