HISTORY :
Oregano is a cousin of marjoram. Its flowers adorn the Mediterranean from May to September, and its name means "mountain ornament". Its aromas are accumulated in the flowers, more than in the stems, which the bees gather to produce their honey. Italians and Provençals love oregano.
PROPERTIES :
Oregano has phytotherapeutic properties: stomachic, bactericidal, carminative, sedative, antispasmodic. Ladies, it would have an effect against cellulite! Here is a natural and economical method to try!
COOKING :
Among the fine herbs, along with chives, parsley and chervil, oregano adds an inimitable peppery and aniseed note to stews and salads. For good recipes, look to Italy. Make a Tuscan-style pie with mozzarella, tomatoes and onion, or if you're feeling up to it, make fresh ravioli. The flavour of oregano is very pleasant with goat's cheese, in puff pastry, aperitif canapés or in sauce.
Note that oregano does not stand long cooking times and must be cooked when it is still green, otherwise it is useless. For a change from the usual tasteless sandwiches, make an oregano mayonnaise or, more amazingly, your own artisanal bread with oregano!
