HISTORY :
Black cardamom comes mainly from Asia and Syria. Cultivated since the 7th century BC. In China, India and Nepal, but it also grows wild. Used in ancient times by the Egyptians as a toothpaste. In India, cardamom is used as incense and as a spice.
It is one of the most widely used and expensive spices in the world, and it takes exactly 40,000 seeds to produce one kilo when harvested by hand!
PROPERTIES :
This spice is used in traditional Chinese medicine, for gastric problems and to treat malaria. When chewed, it has a pleasantly fresh breath. It has anti-inflammatory properties and helps to fight against respiratory diseases.
COOKING :
Cardamom is found in Indian cuisine, chicken khorma, dhals, curries, etc.
You can also add it to the water used to cook pasta and rice. It is perfect in a delicious fruit salad. In Arab countries, to give your coffee a sweet and spicy taste, add 6 teaspoons of ground cardamom and 2 teaspoons of cinnamon.
Cardamom goes very well with aniseed, fennel, ginger, bay leaves, cloves and coriander.
