HISTORY :
The exact origin of brown mustard is uncertain. The first traces of mustard date back to 3000 BC. Mustard is known and cultivated by many civilizations. In Europe, it was first used as a medicine, and later as a foodstuff. Charlemagne, who cultivated many herbs, made it known in France. During the Renaissance, it gradually became a sign of wealth and refinement.
PROPERTIES :
Brown mustard is abundant in minerals (potassium, calcium, iron) and vitamins (A, B and folic acids). Mustard slows down the effects of osteoporosis, is beneficial for bone health and replaces some of the bone density. It also has a laxative effect and is effective in combating constipation and significantly reduces cholesterol.
COOKING :
In cooking, brown mustard is used in marinades, stews, sauerkraut and sauces. It can be used to spice up a vegetable dish or a salad. Mustard seeds are perfect for preparing condiments such as pickles, gherkins, onions and tomatoes. When added to hot oil with garlic and onions, finely ground mustard seeds add a tasty note to simmered dishes.
