HISTORY :
The aromatic tree thrives on four continents: Europe, Asia, America and Africa. These different species are called "soft" or "hard". It is content with poor, even chalky, sandy and especially dry soil, and can withstand altitudes of up to 4,500 metres. A juniper tree can reach a thousand years of age. Legend has it that anyone who eats a berry on a daily basis will not get sick. The ancients burned it to purify the air, to drive out plague and cholera.

Juniper berries are invigorating and aperitive, diuretic and antiseptic. No more excuses to put them in the cupboard!
COOKING:
Juniper berries have a sweet taste and a slight resinous flavour. Juniper is used in the preparation of certain alcoholic beverages typical of Northern Europe, such as Belgian eau de vie and English gin. Somewhat shunned by cooks, juniper berries are found in the Alsatian dish sauerkraut, and they also spice up marinades. Whole or crushed, they create a beautiful alliance with noble poultry, quail or doe.
A hint of juniper in a forest terrine, with rabbit or hare, will be exquisite. The effect will also be great in the preparation of a country pâté.
At the end of the year, you can create a surprise with a guinea fowl with juniper berries.
