HISTORY :
Smoked paprika is also called Pimenton, it is a Spanish speciality. Smoked paprika is a red pepper dried over a wood fire and ground. It is used in the composition of Spanish chorizo.
PROPERTIES :
Thanks to its capsaicin content, paprika helps to combat winter ailments. It reduces arthritis-related pain, promotes blood circulation and helps prevent anaemia. As an antioxidant, it prevents cardiovascular disease.
A source of vitamins B2 and B6, paprika helps maintain muscles and reduces hair loss.
COOKING :
Paprika gives a natural "smoky" note, a flavour between the taste of smoked sausage and bacon. Smoked paprika is used in Spanish cooking (tortillas, paella, potatoes...), salted whipped cream, soup, white fish with fine flesh, dish in sauce. A little pinch in homemade mayonnaise, on chips. But also in all stewed dishes, couscous, hummus, goulash.
Chilli pepper can be moderately to fairly hot, a few pinches are enough to spice up the dish, always at the beginning of cooking.
