HISTORY :
Persillade is one of the most famous mixes in the world and has been since the second half of the 20th century. As you may have guessed, persillade is a mixture of parsley and garlic. It is often garnished with olive oil and also with breadcrumbs.
It is a mixture that you will not regret having bought because it will find its place in your plates many times. It will flavour all your dishes nicely. It goes well with cold sliced beef, simmered beef, grilled or braised lamb, fried fish and even chicken. It also enhances vegetables, tomatoes à la provençale and wonderfully spices up your salad dressings.
COOKING :
In order to vary the pleasures we suggest you to realize the following recipe: "Stuffed mushrooms, parsley and parmesan": Preheat the oven to 200°C. Remove the stems from 4 large mushrooms and peel them.
In a non-stick frying pan, fry 50g of lardons until they are well grilled.
In a bowl, work 3 teaspoons of butter with a fork and add 2-3 spoons of our parsley spice mix.
In an ovenproof dish, arrange the mushroom heads (inside up), place 4-5 grilled lardons, garnish with parsley butter, add salt and pepper and top with parmesan. Bake in the oven for 10 minutes, then broil for 2 minutes and serve immediately with a green salad for example.
