HISTORY :
Native to the mountainous regions of Central China, the cultivation of Sichuan pepper also developed greatly in Japan and more generally in Asia. This full-bodied ingredient with a unique flavour comparable to that of chilli pepper was exposed to Europeans thanks to the famous explorer Marco Polo.
This spice, which does not belong to the pepper family but to the citrus family, was a great success on the tables of the Italian bourgeoisie and then gradually disappeared.
During the 20th century, great French chefs put Sichuan pepper back in the limelight by using it to enhance their creations.
PROPERTIES :
Although it comes from a totally different family of peppers, it has somewhat similar properties; it facilitates transit, has a hint of anti-pain and some aphrodisiac virtues.
