HISTORY :

The massal spice blend is a variant of curry; it was imported by the Indians to the island of Reunion. It is a sort of modified curry spice blend as it contains the same spices as curry but in different quantities, which gives it a different flavour. Even if their names are similar, you should not confuse the massale spice blend with garam massala (also available here).

A very simple recipe consists in frying the meat of your choice with tomatoes, a finely chopped onion and a few spoonfuls of massal spices, according to your taste.

COOKING :

Turn a simple leek quiche into a typical Reunionese dish!

Follow the recipe: Preheat the oven to 180°C. (th 6). Peel the 3 large onions and cut them into four. Clean the 6 leek whites. Cook these vegetables in a pressure cooker for 8 minutes. In the meantime, place the puff pastry in a pie dish (diameter about 28 cm) on baking paper, prick the bottom and the edges with a fork. Place the cooked leek and onion mixture on top and the 200 g of diced ham and spread it evenly over the pastry.

In a bowl, beat the 4 eggs, the 2 portions of herbed cheese with 3 tablespoons of semi-thick cream. Add salt to taste. Add 5 teaspoons of the Massale powder and mix again. Pour this mixture over the tart. Add 70g of grated Gruyere cheese. Bake for 40 minutes.
