HISTORY :
Similar in many ways to thyme or oregano, belonging to the large family of Lamiaceae. Its small pink marjoram flowers love the sun. Marjoram is sometimes referred to as "shepherd's thyme". This branching plant has inspired several legends, its name being that of a servant of Cyprus punished by his king and transformed into marjoram, it is sometimes said that the plant was conceived by the goddess of love to heal the wound caused by Cupid's arrow!
PROPERTIES :
Marjoram is used for migraines, applied as a compress. As an herbal tea, it relieves stomach aches and anxiety.
COOKING :
The aromas released by marjoram are very delicate, to preserve them until tasting, do not subject them to high temperatures. Keep the oregano away when you put it in your dishes, the mixture would be disastrous. On the other hand, rosemary, sage, pepper and garlic are allowed. Marjoram is often overlooked in cookery books, but it deserves a little attention. Courgettes and aubergines in gratin or soup will be a hit at the table. Combine marjoram with lemon for an explosive sauce. You are a gourmet but not a cook! Pasta, rice and omelettes require little preparation, and marjoram will give them plenty of charm!
