HISTORY :
Also known as matricaria chamomile, wild chamomile is at home everywhere, it has no hostile environment, except Australia. The flower has a generous yellow centre and white petals. A big daisy, as the uninitiated would say! Growers harvest it from May to October. It is produced for its essential oil. Hair, body, face, it takes care of our whole body through ointments, creams, oils, masks, etc. It is the most consumed herbal tea plant in the world.
PROPERTIES :
Only wild chamomile is a natural hair lightener, to be used as a daily rinse. It relieves gastric discomfort, spasms and abdominal pain. For women, drink a chamomile tea, to live more serenely the period of menstruation.
COOKING :
Each type of camomile has a specific taste, that of wild camomile seems too bitter for some palates.
To remedy this, combine wild chamomile with a sweet, strong-tempered flavour, such as aniseed or liquorice. This can be ingested as an herbal tea. For the more adventurous who try salty things, fennel will balance it out. The result will be unusual to say the least!
Sweetness remains its favourite domain, with pear or apple.
Wild chamomile is used to make bitter liqueur and wine.
