HISTORY :
The Harissa spice mix is mainly used to make your own Harissa paste.
Simply mix the spices you buy in our online grocery shop with a little water or olive oil. Even simpler, you can offer it in its powdered form at the table. Simply sprinkle it delicately on lamb or mutton, it is an excellent condiment for these meats !!!!
Added to olive oil, it is a divine accompaniment for couscous.
It is also very pleasant to taste it in pan-fried vegetables made of courgettes and aubergines.
If you are particularly fond of Maghreb cuisine, you must order this spice combination because you can incorporate it into an infinite number of meat recipes, soups and also in your pies.
CUISINE :
Tuna salad Tunisian style: Put 600g of fresh tuna in a casserole dish with 2 tbsp. of oil, the bay leaf, the white wine, 1 tbsp. of tomato paste and 1 tbsp. of the harissa spice mix, salt and cover. Simmer for 20 minutes on low heat.
Steam 1 kg of potatoes. Peel and chop the onions, cut them into pieces.
Put them in a bowl with the onions and the peeled and thickly sliced potatoes. Season with salt. Drain the tuna and strain the cooking juices.
Remove the skin and bone from the tuna flesh. Add the tuna to the bowl.
Mix the strained juice with the remaining oil, pour over the bowl, sprinkle with chopped chives and serve warm or cold, but not iced.
