HISTORY :
Harira is a mixture used to flavour the Moroccan soup of the same name traditionally served during the Ramadan period. This soup comes in many forms.
Among the most common recipes, we find the preparation with mutton, pigeon, chicken, beans, almonds, but also chickpeas.
In Morocco, each housewife has her own recipe and her own secrets of success.
COOKING :
In order to make the best use of the spice mix that you will buy on our site, we suggest a basic recipe for lamb:
In a large saucepan, heat olive oil and add a finely chopped onion, garlic, 500 g of lamb cut into cubes, add the harira spices to release their fragrance. For 2 minutes, mix well to impregnate the ingredients with the flavour of the spices.
Add the 4 diced celery stalks, crushed tomatoes (canned) , chickpeas (1⁄2 cup) , lentils (1⁄2 cup), parsley, cilantro, 3 potatoes and 4 whole carrots, the 4 broths, and 2 L water. Bring to a boil, reduce heat and simmer for 1 hour.
Remove the potatoes and carrots, and mash them with some of the soup stock. Return to the pan with the vermicelli. Cook until the vermicelli is tender.
You can serve this Harira with lemon wedges.
