HISTORY :
Flax is a Mediterranean species, more precisely Georgian. It is not known whether it was the Egyptians or the Gauls who first used this plant. What is certain is that both peoples used it to make textile fibres for clothing, ropes, funeral sails and ships.
The two countries remain today two important producers. The French flax industry now represents 50% of the world market.
COOKING :
Tunisians nibble on toasted and salted flaxseed in the middle of the day, as it keeps them awake. In Northern Europe, flaxseed is an ingredient in many cereal breads. This is because its flavour is very similar to that of walnuts. This little seed is very trendy in slimming diets, it is recommended to slip it into salads, cereal bowls at breakfast, yoghurts or other homemade sweet treats such as muffins, hazelnut shortbread...
Its flavour is not lost in cooking, so don't be afraid to add it to all your hot meals, meat, vegetables or fish.
Vegetarians are also very fond of flaxseed. It forms a cocktail of vitamins to be taken alongside sprouted seeds.
